Ingredients

The filling

  • 1 tablespoon olive oil
  • ½ cup onion, small dice
  • 1 clove garlic, minced
  • 4 ounces cream cheese, softened
  • 3 tablespoons dry sherry
  • 1 teaspoon red wine vinegar
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 6 large eggs
  • 4 ounces feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 2 teaspoons Dijon mustard
  • ½ teaspoon garlic salt
  • ¼ teaspoon salt
  • ½ teaspoon pepper

The crust

  • 6 ounces thin deli ham

Instructions

  1. Preheat the oven to 350°F and prepare a muffin pan with baking spray and ham slices.
  2. Sauté onions and garlic in olive oil until translucent, then add sherry and cook until the alcohol smell dissipates.
  3. Stir in red wine vinegar and melted cream cheese until well mixed.
  4. In a bowl, combine spinach, eggs, feta, mozzarella, Dijon mustard, garlic salt, salt, and pepper.
  5. Add the onion-cream cheese mixture to the bowl and blend until smooth.
  6. Divide the mixture evenly into the ham-lined muffin wells.
  7. Bake for 30 minutes or until cooked through, then cool and store.
