The crust
Instructions
- Preheat the oven to 350°F and prepare a muffin pan with baking spray and ham slices.
- Sauté onions and garlic in olive oil until translucent, then add sherry and cook until the alcohol smell dissipates.
- Stir in red wine vinegar and melted cream cheese until well mixed.
- In a bowl, combine spinach, eggs, feta, mozzarella, Dijon mustard, garlic salt, salt, and pepper.
- Add the onion-cream cheese mixture to the bowl and blend until smooth.
- Divide the mixture evenly into the ham-lined muffin wells.
- Bake for 30 minutes or until cooked through, then cool and store.
