Sausage Rolls

The filling

The pastry

frozen puff pastry (17.5 ounces), thawed

all-purpose flour
for dusting
Instructions
- Preheat the oven to 400°F and prepare baking sheets with foil or parchment paper.
- In a skillet, heat olive oil and cook the onion until lightly browned, then transfer to a bowl.
- Cut the puff pastry into strips and refrigerate until ready to use.
- Combine the cooked onion with sausage, sage, 1 egg, salt, and pepper in the bowl.
- Form logs of the sausage mixture and place them down the center of each pastry strip.
- Brush the edges of the pastry with beaten egg, fold over the filling, and seal.
- Cut the rolls into 1½-inch pieces and place them seam-side down on the baking sheets.
- Brush the tops with egg wash and bake for about 20 minutes, rotating halfway through.
- Serve warm or at room temperature.
