Sausage Rolls

Ingredients

The filling

  • 1 tablespoon olive oil or vegetable oil
  • 1 small onion, finely chopped
  • 1 pound ground pork sausage
  • 1 tablespoon fresh sage leaves, minced
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 large eggs, divided

The pastry

  • 1 box frozen puff pastry (17.5 ounces), thawed
  • all-purpose flour for dusting

Instructions

  1. Preheat the oven to 400°F and prepare baking sheets with foil or parchment paper.
  2. In a skillet, heat olive oil and cook the onion until lightly browned, then transfer to a bowl.
  3. Cut the puff pastry into strips and refrigerate until ready to use.
  4. Combine the cooked onion with sausage, sage, 1 egg, salt, and pepper in the bowl.
  5. Form logs of the sausage mixture and place them down the center of each pastry strip.
  6. Brush the edges of the pastry with beaten egg, fold over the filling, and seal.
  7. Cut the rolls into 1½-inch pieces and place them seam-side down on the baking sheets.
  8. Brush the tops with egg wash and bake for about 20 minutes, rotating halfway through.
  9. Serve warm or at room temperature.
