Ingredients

The dough

  • ½ cup unsalted butter
  • ¾ cup whole milk or buttermilk
  • teaspoons instant yeast
  • 3 tablespoons honey
  • 1 large egg
  • 1 teaspoon salt
  • 2 teaspoons fresh chopped sage leaves
  • 1 teaspoon fresh thyme leaves
  • 3 cups bread flour

For finishing

  • optional flaky sea salt

Instructions

  1. Brown the butter in a skillet until golden brown and nutty.
  2. Whisk warm milk, yeast, and 1 tablespoon of honey in a bowl and let it sit until foamy.
  3. Add remaining honey, egg, brown butter, salt, sage, thyme, and 1 cup of bread flour; mix until combined.
  4. Gradually add remaining flour while mixing until the dough pulls away from the sides.
  5. Knead the dough for about 5 minutes until soft and slightly tacky.
  6. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1.5 to 2 hours until doubled.
  7. Punch down the dough and divide it into 14-16 pieces, shaping each into a ball.
  8. Place shaped rolls in a greased baking pan and cover to rise for another 45-60 minutes.
  9. Preheat the oven to 350°F (177°C).
  10. Bake rolls for 23-27 minutes until golden brown.
  11. Brush warm rolls with remaining brown butter mixed with sage and sprinkle with sea salt if desired.
