Brown Butter Sage Dinner Rolls

Instructions
- Brown the butter in a skillet until golden brown and nutty.
- Whisk warm milk, yeast, and 1 tablespoon of honey in a bowl and let it sit until foamy.
- Add remaining honey, egg, brown butter, salt, sage, thyme, and 1 cup of bread flour; mix until combined.
- Gradually add remaining flour while mixing until the dough pulls away from the sides.
- Knead the dough for about 5 minutes until soft and slightly tacky.
- Place the dough in a greased bowl, cover, and let it rise in a warm place for 1.5 to 2 hours until doubled.
- Punch down the dough and divide it into 14-16 pieces, shaping each into a ball.
- Place shaped rolls in a greased baking pan and cover to rise for another 45-60 minutes.
- Preheat the oven to 350°F (177°C).
- Bake rolls for 23-27 minutes until golden brown.
- Brush warm rolls with remaining brown butter mixed with sage and sprinkle with sea salt if desired.
