Ingredients

The base

  • 3 cups gluten-free rolled oats
  • 1 cup chopped raw nuts (almonds, pecans, and/or walnuts)
  • ¼ cup desiccated or shredded coconut (unsweetened)
  • 2 Tbsp chia seeds

Sweeteners and flavorings

  • 3 Tbsp coconut or organic cane sugar
  • 1 tsp sea salt
  • cup cocoa powder
  • ¼ cup coconut (or avocado) oil
  • ½ cup maple syrup

Optional ingredients

  • ½ cup vegan dark chocolate chips or chunks

Instructions

  1. Preheat the oven to 340°F (171°C).
  2. In a food processor or mixing bowl, combine oats, nuts, coconut, chia seeds, coconut sugar, salt, and cocoa powder.
  3. In a small saucepan, warm coconut oil and maple syrup until melted and combined.
  4. Pour the warm mixture over the dry ingredients and mix well.
  5. Spread the mixture evenly on a baking sheet and bake for 17-24 minutes, stirring halfway through.
  6. Let the granola cool completely and then add chocolate if desired.
  7. Store in an airtight container for a few weeks or freeze for up to 1 month.
