Gluten Free Chinese Lo Mein

Ingredients

The noodles

  • ¾ lb. Brown Rice Spaghetti Noodles

The vegetables

  • 1.5 cups Snow Peas
  • ½ cup onion, thinly sliced
  • 8 oz. White Mushrooms, sliced
  • 1 cup Carrots, thinly sliced
  • 1 each yellow bell pepper, cut into thin strips
  • ½ cup Scallions, thinly sliced for garnish

The sauce

  • ¼ cup Tamari
  • 1 tbsp. Sesame oil
  • 1 tbsp. honey
  • 2 cloves garlic, minced
  • to taste Sesame Seeds for garnish

Instructions

  1. 1. Mix together the Tamari, Sesame Oil, honey, and garlic; set aside.
  2. 2. Cook the pasta according to package directions, rinsing with cold water when done.
  3. 3. Heat a little avocado oil in a cast iron pan or wok, then add the mushrooms and cook until browned.
  4. 4. Remove the mushrooms and add the onion, peppers, carrots, and snow peas; stir fry until crisp-tender.
  5. 5. Return the mushrooms to the pan, add the noodles and sauce mixture, and toss off the heat.
  6. 6. Serve with sesame seeds, scallions, and optional sauces.
