Classic Fried Italian Pizza

Ingredients

The sauce

  • cup olive oil
  • 4 tablespoons unsalted butter
  • 8 cloves garlic, finely chopped or grated
  • 1 teaspoon crushed red pepper
  • 2 cans san marzano tomatoes (28 ounces each)
  • 2 tablespoons tomato paste
  • 2 teaspoons dried basil
  • 1 teaspoon oregano
  • to taste salt
  • 1 piece parmesan cheese rind

The toppings

  • 16 ounces smoked mozzarella cheese, sliced
  • to taste pecorino romano cheese, grated
  • 1 bunch fresh basil
  • 1 recipe pizza dough (preferably left to rise in the fridge overnight)

Instructions

  1. Prepare the pizza dough the night before and let it rise in the fridge overnight.
  2. Heat olive oil, butter, garlic, and crushed red pepper in a pot over medium-low heat, cooking the garlic until fragrant and lightly caramelized.
  3. Add the san marzano tomatoes, crushing them by hand, along with tomato paste, dried basil, oregano, salt, and parmesan rind. Bring to a low boil and then simmer for about an hour.
  4. Preheat the oven to 500°F and place a pizza stone under the broiler for 30 minutes.
  5. Heat canola oil in a pot to 350°F. Divide the dough into four balls, dust with semolina, and flatten into 8-10 inch circles.
  6. Fry each dough circle in the hot oil until golden and puffed, about 1-2 minutes per side, then transfer to a surface.
  7. Spread sauce on each fried dough, add cheese and basil, and drizzle with olive oil.
  8. Slide each pizza onto the hot stone and broil until the cheese melts, about 1-1½ minutes. Serve hot.
