Classic Fried Italian Pizza

pizza dough (preferably left to rise in the fridge overnight)
Instructions
- Prepare the pizza dough the night before and let it rise in the fridge overnight.
- Heat olive oil, butter, garlic, and crushed red pepper in a pot over medium-low heat, cooking the garlic until fragrant and lightly caramelized.
- Add the san marzano tomatoes, crushing them by hand, along with tomato paste, dried basil, oregano, salt, and parmesan rind. Bring to a low boil and then simmer for about an hour.
- Preheat the oven to 500°F and place a pizza stone under the broiler for 30 minutes.
- Heat canola oil in a pot to 350°F. Divide the dough into four balls, dust with semolina, and flatten into 8-10 inch circles.
- Fry each dough circle in the hot oil until golden and puffed, about 1-2 minutes per side, then transfer to a surface.
- Spread sauce on each fried dough, add cheese and basil, and drizzle with olive oil.
- Slide each pizza onto the hot stone and broil until the cheese melts, about 1-1½ minutes. Serve hot.
