Ingredients

The crust

  • ½ batch pizza dough
  • 1 tablespoon olive oil
  • 1 clove garlic

The toppings

  • ¾ – 1 cup pizza sauce
  • 1 cup mixed veggies (such as cherry tomatoes, eggplant, onion, green pepper, mushroom)
  • 1 – 1½ cups mozzarella cheese (or dairy-free mozzarella)
  • to taste Italian seasonings (dried basil, oregano, thyme, red pepper, etc.)
  • to taste grated parmesan cheese (optional)
  • to taste fresh basil (optional)

Instructions

  1. Prepare the pizza dough and sauce if using homemade.
  2. If roasting veggies, preheat oven to broil, toss veggies in olive oil, and broil for 4-6 minutes.
  3. Preheat the oven to 450°F (232°C).
  4. Coat a 10-inch cast iron skillet with olive oil and rub a garlic clove around for seasoning.
  5. Press the dough into the pan, forming a 1 to 1.5-inch tall crust up the sides.
  6. Let the dough rest for a few minutes while preparing toppings.
  7. Sprinkle half of the mozzarella cheese into the crust, then add veggies and sauce.
  8. Top with the remaining mozzarella cheese and optional seasonings.
  9. Bake for 25-30 minutes until the crust is golden brown and the cheese is bubbly.
  10. Let rest for 5-10 minutes before cutting and serve.
