  • ½ teaspoon black pepper

Roasted Sweet Potatoes and Apples

  • 4 large sweet potatoes
  • 3 large apples
  • 1 small onion
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • to taste sea salt
  • to taste black pepper
  • to taste olive oil

Mashed Sweet Potatoes with Apple Butter

  • 6 large sweet potatoes
  • ½ cup apple butter
  • 4 tablespoons butter
  • to taste sea salt
  • ½ teaspoon cinnamon (optional)

Apple Beet Compote

  • 3 red beets
  • 3 golden beets
  • 1 fennel bulb
  • 2 large apples
  • ¼ cup walnuts
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 3 tablespoons unsalted butter
  • to taste sea salt
  • to taste black pepper

Instructions

  1. Prepare the cranberry sauce by boiling all ingredients, simmering, and then cooling before refrigerating.
  2. For the cole slaw, mix dressing ingredients, combine with cabbage and carrot, and refrigerate for at least 4 hours.
  3. Roast sweet potatoes and onions, then add apples and continue roasting until everything is tender.
  4. Boil sweet potatoes for the mashed version, then whip with butter, apple butter, and seasoning.
  5. Roast beets and fennel, then sauté apples and walnuts separately before mixing everything together.
