Winter Slaw with Apples and Cranberries

Ingredients

  • 1 small head cabbage (red or green, or half of each)
  • 1 large sweet-crisp apple (such as Honeycrisp)
  • ¼ cup freshly squeezed lemon juice (about 2 small lemons)
  • 2 tablespoons extra-virgin olive oil
  • ¾ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • cup dried cranberries
  • cup toasted pumpkin seeds
  • cup freshly grated Parmesan (about 1 ½ ounces)

Instructions

  1. Slice the cabbage into ultra-thin ribbons and place in a large bowl.
  2. Cut the apple into thin slices and add to the bowl with the cabbage.
  3. In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  4. Pour the dressing over the cabbage and apple mixture and toss to combine.
  5. Sprinkle with dried cranberries, pumpkin seeds, and Parmesan.
  6. If possible, let the slaw sit for 15 minutes before serving to enhance the flavors.
