Winter Slaw with Apples and Cranberries

Instructions
- Slice the cabbage into ultra-thin ribbons and place in a large bowl.
- Cut the apple into thin slices and add to the bowl with the cabbage.
- In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the cabbage and apple mixture and toss to combine.
- Sprinkle with dried cranberries, pumpkin seeds, and Parmesan.
- If possible, let the slaw sit for 15 minutes before serving to enhance the flavors.
