Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Combine the spice mix ingredients in a small bowl and set aside.
- In a large mixing bowl, combine the chicken strips, bell peppers, onions, chopped cilantro, olive oil, and lime juice. Add the spice mix and toss until evenly combined.
- Spread the mixture onto the prepared baking sheet in an even layer.
- Bake in the preheated oven for 20 to 25 minutes, tossing once halfway through, until the veggies are tender and the chicken is cooked through.
- Remove from the oven, garnish with fresh cilantro, and serve with tortillas, sour cream, diced tomatoes, and lime wedges.
