Ingredients

The main ingredients

  • 1.65 lb boneless skinless chicken breasts, sliced into ½-inch thick strips
  • 1 each red bell pepper, sliced
  • 1 each yellow bell pepper, sliced
  • 1 each orange bell pepper, sliced
  • 1 medium onion, cut in half and sliced lengthwise
  • 3 tbsp chopped fresh cilantro, plus more to garnish
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lime juice

The spice mix

  • 1 tbsp ground cumin
  • 1 tbsp garlic powder
  • 1 tsp chili powder
  • 1 tsp chipotle powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp ground black pepper
  • ½ tsp ground coriander

For serving

  • 4 each flour tortillas
  • to taste sour cream
  • to taste diced tomatoes
  • to taste lime wedges

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Combine the spice mix ingredients in a small bowl and set aside.
  3. In a large mixing bowl, combine the chicken strips, bell peppers, onions, chopped cilantro, olive oil, and lime juice. Add the spice mix and toss until evenly combined.
  4. Spread the mixture onto the prepared baking sheet in an even layer.
  5. Bake in the preheated oven for 20 to 25 minutes, tossing once halfway through, until the veggies are tender and the chicken is cooked through.
  6. Remove from the oven, garnish with fresh cilantro, and serve with tortillas, sour cream, diced tomatoes, and lime wedges.
