Ingredients

The chicken and vegetables

  • 1 lb chicken breast
  • 2 medium bell peppers
  • 1 medium onion

The marinade

  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

For the avocado crema

  • 1 medium avocado
  • 1 tbsp lime juice
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the chicken, bell peppers, and onion.
  3. In a bowl, mix olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper to create the marinade.
  4. Toss the chicken and vegetables in the marinade until well coated.
  5. Spread the chicken and vegetables on a sheet pan, using a wire rack if available.
  6. Bake in the preheated oven for about 20-25 minutes until the chicken is cooked through.
  7. While the chicken is baking, prepare the avocado crema by blending avocado, lime juice, and salt until smooth.
  8. Serve the chicken fajitas with the avocado crema.
