Ingredients

The chicken and marinade

  • 2 pounds boneless chicken breast
  • ¼ cup lime juice
  • ¼ cup avocado oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon Southwestern seasoning
  • to taste salt and pepper

The vegetables

  • 3 bell peppers (one each green, red, and yellow), cut into strips
  • 3 large onions, sliced (or 6 small)

For serving

  • tortillas
  • cheddar cheese
  • sour cream
  • limes
  • cilantro
  • avocado

Instructions

  1. Cut the chicken breast into strips and place in a shallow dish.
  2. Whisk together lime juice, avocado oil, garlic, and Southwestern seasoning in a small bowl, reserving 3 tablespoons of the marinade.
  3. Pour the remaining marinade over the chicken and marinate for 30 minutes to up to 2 hours.
  4. Preheat the oven to 400 degrees and place a sheet pan inside.
  5. Remove the hot sheet pan and arrange the marinated chicken, onions, and peppers on it.
  6. Bake for 25 to 30 minutes, brushing with the reserved marinade halfway through.
