Ingredients

The fajitas

  • 2 lb chicken breast, thinly sliced
  • 1 each red pepper, julienned
  • 1 each yellow pepper, julienned
  • 1 each green pepper, julienned
  • 1 large yellow onion, sliced

The seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground coriander
  • ½ teaspoon chipotle chili powder
  • ½ teaspoon salt

The oil

  • 2 tablespoons avocado oil

Instructions

  1. Preheat the oven to 350°F.
  2. Mix the seasoning ingredients in a small bowl and set aside.
  3. On a sheet pan, combine the sliced chicken, peppers, and onion.
  4. Drizzle with avocado oil and sprinkle the spice blend over the top. Toss to coat and spread evenly.
  5. Bake for 12 minutes, then toss the ingredients and bake for another 12 minutes.
  6. Turn on the broiler and broil for 2 to 4 minutes until slightly charred.
