Pear & Blue Cheese Salad with Candied Pecans

Ingredients

The dressing

  • 3 Tbsp. red wine vinegar
  • tsp. white sugar
  • tsp. coarse-grain mustard
  • 2 cloves garlic
  • ½ tsp. kosher salt
  • ¼ c. roughly chopped onion
  • c. olive oil
  • to taste freshly ground black pepper

The salad

  • 1 head Romaine lettuce
  • 3 pears, seeded and diced
  • 1 avocado, pitted and diced
  • ¼ c. white sugar
  • ½ c. chopped pecans
  • 4-5 oz. crumbled Roquefort or Gorgonzola cheese

Instructions

  1. Combine all dressing ingredients except olive oil in a blender and blend until smooth.
  2. With the blender running, add olive oil in a steady stream until combined. Season with black pepper and refrigerate.
  3. In a non-stick skillet, combine sugar and chopped pecans over medium heat, stirring constantly until sugar melts and coats nuts.
  4. Spread the candied nuts on a prepared sheet and let cool completely.
  5. Chop the lettuce and place it in a large salad bowl.
  6. Seed and dice the pears, then toss with diced avocado and lettuce.
  7. Add the candied nuts and crumbled cheese to the salad.
  8. Drizzle with dressing, toss gently to combine, and serve immediately.
