Cozy Beef Stew

For the creamy cauliflower puree

cauliflower, florets removed

Instructions
- Preheat the oven to 350°F.
- Season the beef with kosher salt and optionally coat with flour.
- Sear the beef in a Dutch oven until browned on all sides, then remove and set aside.
- Sauté onion, tomato paste, cumin, paprika, coriander, oregano, and salt until softened.
- Add garlic, soy sauce, and scrape the bottom of the pan to deglaze.
- Pour in beef broth and return the beef to the pot, then bring to a simmer.
- Cover and transfer to the oven for about 3 hours.
- At the 3-hour mark, add delicata squash and potatoes, and cook for an additional 30 minutes.
- Prepare the creamy cauliflower mash by boiling the cauliflower until tender, then blending with butter, salt, and pepper until smooth.
- Serve the stew over the cauliflower mash and garnish as desired.
