Cozy Beef Stew

Ingredients

The stew

  • pounds cubed beef stew meat
  • to taste Kosher salt
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 1 medium yellow onion, peeled and finely diced
  • 3 tablespoons tomato paste
  • 1 tablespoon ground cumin
  • 2 teaspoons ground sweet paprika
  • 1 teaspoon ground coriander
  • ½ teaspoon dried oregano
  • 4 cloves garlic, peeled and minced
  • ¼ cup soy sauce
  • cups beef broth
  • 1 medium delicata squash, cut into slices
  • 1 pound small baby potatoes

For the creamy cauliflower puree

  • 1 head cauliflower, florets removed
  • 2 tablespoons unsalted butter
  • to taste Kosher salt
  • to taste freshly ground black pepper
  • as garnish micro greens or minced Italian parsley

Instructions

  1. Preheat the oven to 350°F.
  2. Season the beef with kosher salt and optionally coat with flour.
  3. Sear the beef in a Dutch oven until browned on all sides, then remove and set aside.
  4. Sauté onion, tomato paste, cumin, paprika, coriander, oregano, and salt until softened.
  5. Add garlic, soy sauce, and scrape the bottom of the pan to deglaze.
  6. Pour in beef broth and return the beef to the pot, then bring to a simmer.
  7. Cover and transfer to the oven for about 3 hours.
  8. At the 3-hour mark, add delicata squash and potatoes, and cook for an additional 30 minutes.
  9. Prepare the creamy cauliflower mash by boiling the cauliflower until tender, then blending with butter, salt, and pepper until smooth.
  10. Serve the stew over the cauliflower mash and garnish as desired.
