Instructions
- Prepare the ice cream maker according to the manufacturer's instructions.
- In a large bowl, place 1½ cups of oat milk and set a mesh strainer on top.
- In a separate bowl, whisk the egg yolks and set near the stove.
- In a saucepan, warm the remaining oat milk, almond butter, sugar, salt, and cinnamon over medium-low heat until smooth and slightly simmering.
- Slowly add the warm oat milk mixture to the egg yolks, whisking constantly to prevent scrambling.
- Scrape the mixture back into the saucepan and stir constantly over medium heat until it thickens slightly.
- Pour the thickened mixture through the strainer into the bowl with oat milk, stir in maple syrup and vanilla.
- Let the mixture cool to room temperature, then chill for at least 2 hours or overnight.
- Freeze the mixture in the ice cream maker according to the manufacturer's instructions, adding mix-ins during the last few minutes.
