Ingredients

  • 3 cups oat milk
  • ¼ cup almond butter
  • cup granulated sugar
  • ¼ teaspoon kosher salt
  • teaspoon ground cinnamon
  • 3 large egg yolks
  • cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon vodka or bourbon
  • ½ cup mix-ins of choice (e.g., chocolate chips, nuts)

Instructions

  1. Prepare the ice cream maker according to the manufacturer's instructions.
  2. In a large bowl, place 1½ cups of oat milk and set a mesh strainer on top.
  3. In a separate bowl, whisk the egg yolks and set near the stove.
  4. In a saucepan, warm the remaining oat milk, almond butter, sugar, salt, and cinnamon over medium-low heat until smooth and slightly simmering.
  5. Slowly add the warm oat milk mixture to the egg yolks, whisking constantly to prevent scrambling.
  6. Scrape the mixture back into the saucepan and stir constantly over medium heat until it thickens slightly.
  7. Pour the thickened mixture through the strainer into the bowl with oat milk, stir in maple syrup and vanilla.
  8. Let the mixture cool to room temperature, then chill for at least 2 hours or overnight.
  9. Freeze the mixture in the ice cream maker according to the manufacturer's instructions, adding mix-ins during the last few minutes.
