Shaved Zucchini Salad with Plums, Herbs & Almonds

golden plums
or peaches, nectarines, other variety of plum

flat leaf parsley, chopped

fresh thyme leaves, chopped

shallot, finely diced (about 3 tablespoons diced shallot)
The dressing and toppings

champagne vinegar

sliced almonds

soft vegan cheese, crumbled (about 56 grams)

extra virgin olive oil

teaspoon
ground dried chillies, or to taste

Instructions
- Soak the diced shallots in champagne vinegar for 10-15 minutes.
- Toast the sliced almonds in the oven or skillet until golden, then set aside to cool.
- Use a vegetable peeler to shave the zucchinis lengthwise, discarding the core.
- Arrange the shaved zucchini on a serving plate and top with the soaked shallots and remaining vinegar.
- Cut the golden plums into wedges and place them on top of the zucchini.
- Sprinkle the chopped thyme and parsley over the salad.
- Drizzle the olive oil and season with salt, pepper, and ground chillies.
- Garnish with crushed toasted almonds and crumbled vegan cheese.
- Let the salad sit for 5-10 minutes before serving.
