Shaved Zucchini Salad with Plums, Herbs & Almonds

Ingredients

The salad

  • 2 medium zucchinis
  • 2 golden plums or peaches, nectarines, other variety of plum
  • cup flat leaf parsley, chopped
  • 2 teaspoons fresh thyme leaves, chopped
  • 1 small shallot, finely diced (about 3 tablespoons diced shallot)

The dressing and toppings

  • 2 tablespoons champagne vinegar
  • 3 tablespoons sliced almonds
  • 2 oz soft vegan cheese, crumbled (about 56 grams)
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon ground dried chillies, or to taste
  • to taste sea salt and ground black pepper

Instructions

  1. Soak the diced shallots in champagne vinegar for 10-15 minutes.
  2. Toast the sliced almonds in the oven or skillet until golden, then set aside to cool.
  3. Use a vegetable peeler to shave the zucchinis lengthwise, discarding the core.
  4. Arrange the shaved zucchini on a serving plate and top with the soaked shallots and remaining vinegar.
  5. Cut the golden plums into wedges and place them on top of the zucchini.
  6. Sprinkle the chopped thyme and parsley over the salad.
  7. Drizzle the olive oil and season with salt, pepper, and ground chillies.
  8. Garnish with crushed toasted almonds and crumbled vegan cheese.
  9. Let the salad sit for 5-10 minutes before serving.
