Ingredients

Biscuit Dough

  • 12 tablespoons cold unsalted butter
  • 2 cups all purpose flour
  • 2 cups white whole wheat flour
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 ½ cups cold low-fat buttermilk

Filling

  • 3 tablespoons unsalted butter
  • ¼ cup granulated sugar
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ¾ cup finely chopped toasted pecans

Buttermilk Glaze

  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2-3 tablespoons low fat buttermilk

Instructions

  1. Preheat the oven to 375°F and prepare a baking dish.
  2. Cut the butter into small pieces and freeze it.
  3. Mix the dry ingredients in a bowl and cut in the butter until the mixture resembles coarse meal.
  4. Add buttermilk and mix until a dough forms.
  5. Roll the dough into a rectangle and brush with melted butter.
  6. Mix the filling ingredients and sprinkle over the dough.
  7. Roll the dough tightly and cut into 8 equal pieces.
  8. Arrange the rolls in the baking dish and bake until golden brown.
  9. Prepare the glaze and drizzle over warm rolls before serving.
