Instructions
- Preheat the oven to 400°F.
- Rinse and drain the chickpeas, patting them dry, then toss with olive oil, lemon juice, garlic powder, salt, and pepper.
- Spread the chickpeas in an even layer on a sheet pan and bake for 20 to 30 minutes.
- In a bowl, toss the shrimp with olive oil, lemon juice, garlic, lemon zest, red pepper flakes, salt, and pepper, and let marinate for 10 to 15 minutes.
- Once the chickpeas are roasted, spread the marinated shrimp over them and optionally add lemon slices.
- Return the pan to the oven and roast for an additional 8 to 10 minutes until the shrimp are pink and opaque.
- Serve with a squeeze of lemon juice and garnish with parsley.
