Lemon Garlic Shrimp with Chickpeas

Ingredients

The Chickpeas

  • 2 cans (15 oz) chickpeas
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper

The Shrimp

  • lbs large shrimp
  • 1 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1 tsp lemon zest
  • 3 cloves garlic
  • 1 tsp black pepper
  • ½ tsp salt
  • ½ tsp paprika
  • ½ tsp red pepper flakes
  • cup parsley

Instructions

  1. Preheat the oven to 400°F.
  2. Rinse and drain the chickpeas, patting them dry, then toss with olive oil, lemon juice, garlic powder, salt, and pepper.
  3. Spread the chickpeas in an even layer on a sheet pan and bake for 20 to 30 minutes.
  4. In a bowl, toss the shrimp with olive oil, lemon juice, garlic, lemon zest, red pepper flakes, salt, and pepper, and let marinate for 10 to 15 minutes.
  5. Once the chickpeas are roasted, spread the marinated shrimp over them and optionally add lemon slices.
  6. Return the pan to the oven and roast for an additional 8 to 10 minutes until the shrimp are pink and opaque.
  7. Serve with a squeeze of lemon juice and garnish with parsley.
