Ingredients

Dry Brine Ingredients

  • 1 14 pound fresh turkey
  • ½ cup kosher salt
  • 2 tablespoons baking powder

Wet Brine Ingredients

  • 3 cups kosher salt
  • ½ cup granulated sugar
  • 1 medium yellow onion, chopped
  • 1 bunch fresh thyme
  • 1 tablespoon whole black peppercorns, cracked

Instructions

  1. Rinse the turkey under cold water and remove excess fat and pin feathers.
  2. Pat the turkey dry with paper towels.
  3. Combine kosher salt and baking powder in a small bowl and sprinkle over the turkey from a distance.
  4. Refrigerate the turkey uncovered for 12 to 24 hours.
  5. Remove the turkey from the refrigerator and let it sit at room temperature for 2 hours before roasting.
  6. For wet brining, fill a pot with cold water and add kosher salt, sugar, onion, thyme, and peppercorns.
  7. Submerge the turkey breast-side down in the brine and refrigerate for 24 hours.
  8. Remove the turkey from the brine, rinse under cold water, and let it sit at room temperature before roasting.
