How to Brine a Turkey

Instructions
- Fill a large pot with 2 gallons of water.
- Remove 2 cups of water from the pot and heat it in a saucepan with the kosher salt until dissolved.
- Add the salted water back into the pot and whisk together.
- Add the sliced citrus fruits and optional aromatics to the brine.
- Submerge the whole turkey in the brine.
- Place the pot in the refrigerator for 12 hours or overnight.
