Ingredients

Brine Ingredients

  • 2 gallons water
  • cups kosher salt
  • 2 pieces citrus fruit, sliced

Optional Aromatics

  • ½ white onion diced
  • 4 cloves garlic, peeled
  • 5 sprigs fresh herbs

Instructions

  1. Fill a large pot with 2 gallons of water.
  2. Remove 2 cups of water from the pot and heat it in a saucepan with the kosher salt until dissolved.
  3. Add the salted water back into the pot and whisk together.
  4. Add the sliced citrus fruits and optional aromatics to the brine.
  5. Submerge the whole turkey in the brine.
  6. Place the pot in the refrigerator for 12 hours or overnight.
