Simple Turkey Brine

Ingredients

  • 125 g kosher salt
  • 150 g sugar
  • 1 carrot peeled and roughly chopped
  • 1 large onion root end removed and halved
  • 2 stalks celery, roughly chopped
  • 2 large sprigs thyme
  • 2 leaves bay
  • 1 Tbsp. whole black peppercorns
  • ¼ tsp. crushed red pepper flakes
  • ¼ tsp. fennel seeds
  • 1 turkey (12-16 lb) giblets removed

Instructions

  1. 1. In a large pot, bring kosher salt, sugar, and water to a boil, stirring until dissolved.
  2. 2. Turn off the heat and add carrot, onion, celery, thyme, bay leaves, peppercorns, red pepper flakes, and fennel seeds.
  3. 3. Refrigerate the brine mixture until it is cold.
  4. 4. Once cold, add cold water to the pot.
  5. 5. Submerge the turkey in the brine, placing a plate on top to keep it submerged.
  6. 6. Cover and chill for at least 24 hours, up to 72 hours.
