Simple Turkey Brine

Instructions
- 1. In a large pot, bring kosher salt, sugar, and water to a boil, stirring until dissolved.
- 2. Turn off the heat and add carrot, onion, celery, thyme, bay leaves, peppercorns, red pepper flakes, and fennel seeds.
- 3. Refrigerate the brine mixture until it is cold.
- 4. Once cold, add cold water to the pot.
- 5. Submerge the turkey in the brine, placing a plate on top to keep it submerged.
- 6. Cover and chill for at least 24 hours, up to 72 hours.
