Wet Brine Turkey

Ingredients

  • 12 cups water
  • 4 cups apple juice
  • 1 cup kosher salt
  • 1 cup brown sugar
  • 2 teaspoons black pepper
  • 6 sprigs fresh thyme
  • 3 sprigs fresh rosemary
  • 3 leaves bay leaves
  • 4 cloves garlic
  • 2 oranges sliced into quarters
  • 2 tablespoons honey

Instructions

  1. Combine water, apple juice, brown sugar, and salt in a stock pot and heat for 2-3 minutes.
  2. Add black pepper, thyme, rosemary, bay leaves, garlic, oranges, and honey. Stir and bring to a boil until dissolved.
  3. Remove from heat and let the brine cool completely.
  4. Place the thawed turkey breast side down in a container.
  5. Pour the cooled brine over the turkey, ensuring it is fully submerged. Add more cold water if necessary.
  6. Cover the container and refrigerate for 16-48 hours, with a minimum of 8 hours.
  7. After brining, remove the turkey, pat dry, and let it come to room temperature before cooking.
