Ingredients

  • 1 gallon water
  • 8 cups apple juice or apple cider
  • 1 ¼ cups kosher salt
  • ½ cup brown sugar
  • 4 leaves bay leaves
  • 2 tablespoons black peppercorns
  • 2 tablespoons dried rosemary
  • 2 teaspoons allspice berries
  • 1 teaspoon whole cloves
  • 1 stick cinnamon
  • 2 peels large oranges
  • 8 cups ice or cold water
  • 1 uncooked turkey up to 16 pounds

Instructions

  1. Combine water, apple juice, salt, brown sugar, bay leaves, peppercorns, rosemary, allspice, and orange peels in a large stockpot.
  2. Bring the mixture to a boil, stirring until the salt and sugar dissolve, then remove from heat and let it cool.
  3. Prepare a large container for brining and line it with a brining bag if desired.
  4. Place the turkey in the brining bag and add ice, then pour the cooled brine over the turkey.
  5. Ensure the turkey is fully submerged, adding more water if necessary, and seal the bag or cover the container.
  6. Brine the turkey in the refrigerator for 12 to 24 hours, keeping the temperature between 32°F and 40°F.
  7. After brining, remove the turkey, rinse it thoroughly, and pat it dry.
  8. Refrigerate the turkey uncovered for several hours to dry the skin before cooking.
