Instructions
- Combine water, apple juice, salt, brown sugar, bay leaves, peppercorns, rosemary, allspice, and orange peels in a large stockpot.
- Bring the mixture to a boil, stirring until the salt and sugar dissolve, then remove from heat and let it cool.
- Prepare a large container for brining and line it with a brining bag if desired.
- Place the turkey in the brining bag and add ice, then pour the cooled brine over the turkey.
- Ensure the turkey is fully submerged, adding more water if necessary, and seal the bag or cover the container.
- Brine the turkey in the refrigerator for 12 to 24 hours, keeping the temperature between 32°F and 40°F.
- After brining, remove the turkey, rinse it thoroughly, and pat it dry.
- Refrigerate the turkey uncovered for several hours to dry the skin before cooking.
