Healthy Rice Krispie Treats

Optional topping

Instructions
- Line an 8x8-inch baking pan with parchment paper and coat with nonstick spray.
- In a saucepan, combine brown rice syrup, peanut butter, and coconut oil over medium heat until smooth.
- Remove from heat and stir in vanilla extract and salt, then mix in crispy rice cereal until evenly coated.
- Pour mixture into the prepared pan and press down firmly into an even layer.
- Let rest for 30 minutes to set.
- If using, melt chocolate and drizzle over the top of the treats.
- Refrigerate briefly to set the chocolate, then cut into squares and serve.
