Ingredients

The base

  • 3 ¼ cups rice krispies (or brown rice crispies)
  • cup no-stir creamy peanut butter or nut/seed butter of choice
  • cup agave syrup or maple syrup
  • a pinch sea salt
  • ½ teaspoon vanilla extract (optional)

Coating and Mix-Ins

  • ½ cup white chocolate or dark chocolate chips

Instructions

  1. Line an 8×8 baking pan with parchment paper or spray it with oil.
  2. Place the rice crisps in a large mixing bowl and set aside.
  3. In a small saucepan, whisk together the nut butter, agave syrup, and salt.
  4. Bring the mixture to a bubble, then reduce heat and simmer for 3 minutes while stirring frequently.
  5. Remove from heat, mix in vanilla, and quickly combine with the rice crispies.
  6. Press the mixture into the prepared baking pan and chill in the fridge for 30-45 minutes.
  7. Melt the chocolate and spread it on top of the set rice krispies before slicing.
