Instructions
- Melt the butter in a pot over medium heat.
- Add marshmallows, peanut butter, and vanilla extract, stirring until melted and smooth.
- Remove from heat and mix in Rice Krispie cereal until fully combined.
- Transfer the mixture to a greased 8x8 baking dish and press down evenly.
- Melt chocolate chips and coconut oil in a bowl using a microwave or double-boiler method, stirring until combined.
- Pour melted chocolate over the Rice Crispy Treats and sprinkle with crushed peanuts if desired.
- Refrigerate for two hours until solidified, then slice into squares and enjoy.
