One-Pot Spicy Dirty Rice with Chicken and Sausage

Ingredients

Seasoning

  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons paprika
  • ½ teaspoon black pepper
  • ½ teaspoon dried minced onion
  • ½ teaspoon oregano
  • ½ teaspoon cayenne pepper
  • 1/8 teaspoon crushed red pepper flakes
  • 1 teaspoon lemon juice

Cooking Ingredients

  • 6 teaspoons olive oil
  • 4 6 oz boneless, skinless chicken breasts
  • 1 13 oz link turkey smoked sausage, sliced
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 medium jalapeno, seeded and diced
  • 1 cup dry long-grain white rice
  • 2 ¼ cups reduced sodium fat free chicken broth
  • a pinch salt and pepper
  • optional parsley for garnish

Instructions

  1. Mix seasoning ingredients to form a paste and rub it over the chicken breasts.
  2. Preheat the oven to 350°F.
  3. In a Dutch oven, heat oil and brown the sausage, then set aside.
  4. Add more oil, sear the chicken on both sides, then remove from the pot.
  5. Reduce heat, sauté onions, celery, and jalapeno, scraping up brown bits.
  6. Add remaining seasoning, rice, and broth, and bring to a simmer.
  7. Return sausage and chicken to the pot, cover, and bake for 30 minutes.
  8. Remove cover and bake for an additional 10-15 minutes until rice is done.
  9. Slice chicken before serving.
