Ingredients

The salad

  • 4 cups packed baby spinach leaves
  • 1 cup sliced fresh strawberries
  • 1 small cucumber, unpeeled, sliced
  • 2 tablespoons fresh basil leaves, chopped
  • 1 package (8-ounce) vegan feta cheese, cubed

The balsamic vinaigrette

  • 1 ½ tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • a pinch salt (optional)
  • a pinch black pepper

Instructions

  1. Combine spinach, sliced strawberries, sliced cucumber, chopped basil, and feta cubes in a large salad bowl.
  2. Gently toss the salad ingredients together.
  3. In a small dish, whisk together olive oil, balsamic vinegar, salt, and pepper until combined.
  4. Drizzle the vinaigrette over the salad and gently toss to distribute the dressing.
  5. Serve immediately.
