Ingredients

The salad

  • 1 pint strawberries
  • ½ cup raw unsalted walnuts
  • 10 ounces spinach
  • 4 ounces goat cheese

The vinaigrette

  • 3 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon maple syrup
  • teaspoon coarse salt
  • to taste freshly ground black pepper

Instructions

  1. Prepare the strawberries by removing the tops and slicing them into quarters, setting aside ½ cup for the vinaigrette.
  2. Toast the walnuts in a medium skillet over medium heat for 2-5 minutes until fragrant.
  3. In a blender, combine ½ cup sliced strawberries, balsamic vinegar, olive oil, lemon juice, maple syrup, and salt. Blend until smooth.
  4. In a large bowl, toss the remaining strawberries, crumbled goat cheese, and toasted walnuts together.
  5. Add freshly ground black pepper to taste and dress the salad with the vinaigrette before serving.
