Instructions
- Preheat the oven to 350°F and prepare a 9x9 inch square metal brownie pan with cooking spray and parchment paper.
- Fluff the dry ingredients with a whisk and sift the cocoa powder before measuring.
- Combine the dry ingredients in a medium bowl and mix well, adding ⅔ of the nuts.
- In a separate bowl, mash the banana and mix in the flavorings, eggs, coconut milk, and vinegar one at a time.
- Combine the wet and dry ingredients using a hand mixer until fully incorporated.
- Spread the thick batter evenly in the prepared pan, using a waxed paper to help distribute it.
- Top with the remaining nuts and chocolate chips, pressing them lightly into the batter.
- Bake for about 25 minutes until the top feels springy but not wet.
- Cut into 16 servings.
