Ingredients

Dry Ingredients

  • 2 cups Almond Flour
  • cup Coconut Flour
  • cup cocoa powder
  • ½ cup low carb sugar (or Swerve or Lakanto)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • 5 oz over-ripe banana (one medium)
  • 1 teaspoon vanilla
  • ¼ teaspoon maple extract
  • ¼ teaspoon banana extract (or almond or chocolate)
  • ½ teaspoon stevia glycerite
  • 3 large eggs
  • ¼ cup full fat coconut milk
  • 1 tablespoon vinegar

Optional Ingredients

  • ½ cup walnuts
  • 3 tablespoons Lili's Sugar-free Chocolate Chips or your favorite low sugar chocolate

Instructions

  1. Preheat the oven to 350°F and prepare a 9x9 inch square metal brownie pan with cooking spray and parchment paper.
  2. Fluff the dry ingredients with a whisk and sift the cocoa powder before measuring.
  3. Combine the dry ingredients in a medium bowl and mix well, adding ⅔ of the nuts.
  4. In a separate bowl, mash the banana and mix in the flavorings, eggs, coconut milk, and vinegar one at a time.
  5. Combine the wet and dry ingredients using a hand mixer until fully incorporated.
  6. Spread the thick batter evenly in the prepared pan, using a waxed paper to help distribute it.
  7. Top with the remaining nuts and chocolate chips, pressing them lightly into the batter.
  8. Bake for about 25 minutes until the top feels springy but not wet.
  9. Cut into 16 servings.
