Ingredients

Creamy Mustard Dressing

  • 3 tablespoons raw cashew butter
  • 2 tablespoons grainy mustard
  • 1 tablespoon Dijon mustard
  • 3 tablespoons water
  • 1 tablespoon white wine vinegar
  • 1 teaspoon maple syrup or agave nectar
  • ¼ cup olive oil
  • ½ teaspoon celery seed
  • to taste sea salt and ground black pepper

Slaw

  • 5 cups shredded green cabbage
  • 2 cups sliced kale leaves
  • 1 cup shredded/julienned carrots
  • 1 cup thinly sliced sweet onion
  • ½ cup roughly chopped fresh dill

Instructions

  1. Whisk together the dressing ingredients in a small bowl until creamy and set aside.
  2. In a large bowl, combine the shredded vegetables and season with vinegar, salt, and pepper.
  3. Toss the vegetables to coat them evenly.
  4. Pour the dressing over the vegetables and toss until well coated.
  5. Garnish with extra dill and celery seed before serving.
