Instructions
- Sauté onions in olive oil over medium heat for about 7 minutes.
- Add sweet potatoes, garlic, and bell pepper, and sauté for another 7 minutes.
- Stir in the spices and cook for 1 more minute.
- Add the tomatoes (with liquid), beans, and vegetable broth, then bring to a boil.
- Reduce heat and simmer, covered, for at least 30 minutes, preferably 1 hour for better flavor.
