Instant Pot Pineapple Fried Rice

Instructions
- 1. Heat olive oil in the Instant Pot and sauté onion and red pepper until softened.
- 2. Add chopped ham and stir, then add the beaten eggs and cook until set.
- 3. Stir in brown rice, water, soy sauce, and chopped pineapple.
- 4. Cover the pot, set the vent to sealing, and cook on high pressure for 24 minutes.
- 5. After cooking, let it sit on keep warm for 5 minutes before venting.
- 6. Serve in bowls and garnish with scallions.
