Instructions
- Combine all sauce ingredients in a bowl and whisk together.
- Rinse the rice under cold water until water runs clear, then transfer to the Instant Pot.
- Add water, oil, and salt to the rice and stir. Cook on high pressure for 3 minutes, then naturally release for 8 minutes.
- Fluff the rice with a fork and add mixed vegetables and sauce, then turn on the sauté feature and cook for 2-3 minutes.
- Push the veggies aside, add olive oil, and scramble the eggs until light and fluffy, about 4-5 minutes.
- Fold the eggs into the rice and vegetables, then serve topped with green onions and optional salt.
