Ingredients

Blue Cheese Dressing

  • ½ cup blue cheese
  • ½ cup sour cream
  • 1 clove garlic (smashed) or dash of ground garlic
  • ¼ cup mayo
  • 1 tbsp pickle juice
  • to taste freshly ground sea salt
  • to taste pepper

Blue Cheese (Smash) Burgers

  • 16 oz grassfed chuck (beef)
  • 1 tbsp butter
  • 1 tbsp The W Sauce or Worcestershire Sauce
  • to taste salt
  • to taste pepper

Wedge Salad

  • 1 head iceberg lettuce
  • 1 pint cherry tomatoes
  • 6 strips cooked bacon (chopped)
  • ½ cup blue cheese crumbles
  • ¼ cup blue cheese dressing

Instructions

  1. Prepare the blue cheese dressing and refrigerate until ready to use.
  2. Mix ground chuck, Worcestershire sauce, butter, salt, and pepper to form the burger mixture.
  3. Cook the bacon in the microwave or oven for the salad.
  4. Heat a cast iron pan, coat with butter, and place a handful of the burger mixture in the pan, smashing it to create crispy edges.
  5. Flip the burger after a minute and add blue cheese on top.
  6. Slice the iceberg lettuce into quarters and place on a plate.
  7. Layer the blue cheese dressing, cherry tomatoes, bacon, and the smash burger on the wedge salad.
  8. Secure the smash burger to the wedge with a steak knife if desired.
