Ingredients

The blue cheese dressing

  • ¾ cup blue cheese crumbles
  • ¼ cup buttermilk
  • ¼ cup sour cream
  • 1 tablespoon fresh lemon juice
  • 2 pieces scallions
  • ¾ cup mayonnaise
  • to taste salt
  • to taste black pepper

The wedge salad

  • 1 head iceberg lettuce
  • 4 slices cooked bacon
  • 2 large tomatoes
  • 1 small red onion
  • ¼ cup blue cheese crumbles

Instructions

  1. Make the blue cheese dressing by blending blue cheese, sour cream, buttermilk, scallions, and lemon juice in a food processor until smooth.
  2. Stir in mayonnaise and season with salt and pepper, then chill until ready to serve.
  3. Soak chopped red onion in ice water for a few minutes to crisp them up.
  4. Cut the iceberg lettuce into wedges and place them on plates.
  5. Spoon the blue cheese dressing over each wedge and top with bacon, tomatoes, and red onions.
  6. Garnish with additional blue cheese crumbles.
