Instructions
- Make the blue cheese dressing by blending blue cheese, sour cream, buttermilk, scallions, and lemon juice in a food processor until smooth.
- Stir in mayonnaise and season with salt and pepper, then chill until ready to serve.
- Soak chopped red onion in ice water for a few minutes to crisp them up.
- Cut the iceberg lettuce into wedges and place them on plates.
- Spoon the blue cheese dressing over each wedge and top with bacon, tomatoes, and red onions.
- Garnish with additional blue cheese crumbles.
