Easy Oven Baked Chicken Fajitas

Ingredients

The marinade

  • ½ cup coconut aminos
  • 2 units limes, juice
  • ½ cup cilantro, chopped
  • 1 tbsp cumin
  • 1 tbsp garlic powder
  • 1 tbsp chili powder
  • 1 tbsp ground pepper

The fajitas

  • 2 lbs boneless skinless chicken breasts
  • 1 unit red onion, sliced
  • 2 units bell peppers, sliced
  • 3 cloves garlic, minced
  • 2 tbsp avocado oil
  • to taste units salt and pepper

For shells and toppings

  • 1 unit avocado, sliced
  • ¼ cup cilantro, chopped
  • 2 bunches broad leaf greens

Instructions

  1. Preheat the oven to 400°F.
  2. Mix all marinade ingredients in a bowl.
  3. Slice chicken into strips and marinate.
  4. Chop onion, bell peppers, and garlic.
  5. Grease a sheet pan and spread veggies on it.
  6. Nestle chicken pieces among the veggies.
  7. Bake for 15-18 minutes until cooked through.
  8. Prepare lettuce leaves for serving.
  9. Serve fajita mixture in lettuce leaves topped with avocado and cilantro.
