Roast Beef Sandwich with Melted Swiss & Onions

whole wheat Italian or French bread, cut into 4 pieces

reduced-fat Swiss Cheese or provolone
Instructions
- Heat a skillet over medium-low heat.
- Add the oil and onions, season with salt and pepper, and cook until slightly brown, about 15 to 17 minutes.
- Slice the bread open and place 3 oz of cooked roast beef on each piece.
- Top with 1/4 of the caramelized onions and cheese.
- Place under the broiler for 1 to 2 minutes to melt the cheese, being careful not to burn it.
