Instructions
- Trim excess fat from the chuck roast and cut it into large chunks.
- Sear the chuck roast in a pot over medium-high heat until browned on all sides, then remove it from the pot.
- Sauté minced garlic in the same pot until fragrant, then return the beef to the pot.
- Add beef broth, bay leaves, Italian seasoning, smoked paprika, salt, and pepper, then bring to a boil.
- Reduce heat to low, cover, and simmer for 3 to 4 hours until the beef is fork-tender.
- Shred the beef with two forks and return it to the pot to simmer for an additional 10 minutes.
- Assemble the sandwiches with shredded beef, provolone cheese, and desired toppings.
