Ingredients

The beef

  • 3 pounds chuck roast
  • 3 cups beef broth
  • 4 cloves garlic
  • 3 leaves bay leaves
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

To assemble

  • Hoagie buns hoagie buns
  • Provolone cheese provolone cheese
  • Red pepper rings red pepper rings
  • Pepperoncini peppers pepperoncini peppers
  • Giardiniera giardiniera
  • Pickled jalapenos pickled jalapenos

Instructions

  1. Trim excess fat from the chuck roast and cut it into large chunks.
  2. Sear the chuck roast in a pot over medium-high heat until browned on all sides, then remove it from the pot.
  3. Sauté minced garlic in the same pot until fragrant, then return the beef to the pot.
  4. Add beef broth, bay leaves, Italian seasoning, smoked paprika, salt, and pepper, then bring to a boil.
  5. Reduce heat to low, cover, and simmer for 3 to 4 hours until the beef is fork-tender.
  6. Shred the beef with two forks and return it to the pot to simmer for an additional 10 minutes.
  7. Assemble the sandwiches with shredded beef, provolone cheese, and desired toppings.
