Ingredients

The beef

  • 3 to 4 pound chuck roast or round roast
  • 1 tablespoon Kosher salt
  • 14.5 ounce beef broth
  • 8 ounce pepperoncini pepper slices
  • ¼ cup pepperoncini juice
  • 8 ounce giardiniera
  • slices Provolone cheese
  • for serving Hoagie buns

The seasoning

  • 1 tablespoon Italian seasoning
  • 2 teaspoon granulated sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon dried thyme

Instructions

  1. Let the meat rest at room temperature and season with salt.
  2. Sear the beef in a hot skillet until golden brown.
  3. Transfer the beef to the slow cooker and deglaze the pan with some beef broth.
  4. Combine the seasoning ingredients and sprinkle over the beef.
  5. Add the pepperoncini and giardiniera to the slow cooker.
  6. Pour in the remaining beef broth and cover.
  7. Cook on LOW for 8 to 10 hours until the meat shreds easily.
  8. Shred the beef and cook for an additional 30 minutes.
  9. Toast the hoagie buns in the oven.
  10. Fill the buns with shredded beef, cheese, and additional toppings as desired.
