Ingredients

The beef

  • 2 lb beef roast

The vegetables

  • 1 onion, diced

The cooking fat

  • 1 tbsp ghee

The broth

  • 1 cup beef broth

The seasoning

  • 1 tbsp Italian seasoning
  • 2 tsp sea salt
  • 2 tsp ground pepper

The Italian dressing

  • cup avocado oil
  • ¼ cup white vinegar
  • 1 lemon, juice of
  • 2 tsp dijon mustard
  • 2 tbsp Italian seasoning
  • ½ tsp sea salt
  • ½ tsp ground pepper
  • 1 jar pepperoncini peppers, drained & chopped

Instructions

  1. Dice the onion and cut the roast into 2-inch cubes.
  2. Mix the seasoning ingredients in a small bowl and coat the beef cubes with the mixture.
  3. Sauté the beef cubes in ghee in the Instant Pot until browned on all sides.
  4. Add the onions and beef broth to the pot, then secure the lid and cook on high pressure for 30 minutes.
  5. Allow the pressure to naturally release for 20 minutes after cooking.
  6. Prepare the Italian dressing by mixing all the dressing ingredients in a bowl.
  7. Remove the beef, shred it, and discard the broth.
  8. Return the shredded beef to the pot, add the Italian dressing, and sauté for 3-4 minutes until warmed through.
