Chocolate Hazelnut Shortbread Cookies

Instructions
- Finely chop raw hazelnuts and roast them in the oven.
- Cream together softened butter and sugar until smooth, then add vanilla and mix.
- Incorporate all-purpose flour, rice flour, cocoa powder, hazelnuts, and salt to form the dough.
- Roll the dough into a log, refrigerate for 1 hour.
- Slice the log into ¼ inch thick pieces and chill on a baking sheet for 20-30 minutes.
- Bake in a preheated oven at 325°F for 20-25 minutes, then cool on a rack.
