Ingredients

The dough

  • 2 sticks unsalted butter, softened
  • ½ cup sugar
  • 1 teaspoon vanilla
  • cups all-purpose flour
  • cup rice flour
  • ¼ cup cocoa powder
  • ½ cup hazelnuts, toasted and finely chopped
  • ¼–½ teaspoon salt

For coating (optional)

  • cup hazelnuts, chopped

Instructions

  1. Finely chop raw hazelnuts and roast them in the oven.
  2. Cream together softened butter and sugar until smooth, then add vanilla and mix.
  3. Incorporate all-purpose flour, rice flour, cocoa powder, hazelnuts, and salt to form the dough.
  4. Roll the dough into a log, refrigerate for 1 hour.
  5. Slice the log into ¼ inch thick pieces and chill on a baking sheet for 20-30 minutes.
  6. Bake in a preheated oven at 325°F for 20-25 minutes, then cool on a rack.
