Ingredients

The catfish and marinade

  • 12 ounces catfish
  • 1 cup buttermilk
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon cayenne pepper

The coating

  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2-3 inches vegetable oil

Instructions

  1. Whisk together buttermilk, paprika, garlic powder, and cayenne pepper in a bowl.
  2. Combine flour, salt, and black pepper in another bowl or ziplock bag.
  3. Submerge catfish fillets in the buttermilk mixture and refrigerate for 30 minutes to 2 hours.
  4. Remove catfish from the refrigerator 15 minutes before cooking to bring to room temperature.
  5. Heat vegetable oil in a large skillet to 375°F.
  6. Remove catfish from buttermilk, shake off excess, and coat in the seasoned flour.
  7. Place breaded catfish on a wire rack until oil is hot.
  8. Fry catfish for 5-6 minutes on each side until golden brown.
  9. Drain fried catfish on paper towels or a wire rack.
