Instructions
- Whisk together buttermilk, paprika, garlic powder, and cayenne pepper in a bowl.
- Combine flour, salt, and black pepper in another bowl or ziplock bag.
- Submerge catfish fillets in the buttermilk mixture and refrigerate for 30 minutes to 2 hours.
- Remove catfish from the refrigerator 15 minutes before cooking to bring to room temperature.
- Heat vegetable oil in a large skillet to 375°F.
- Remove catfish from buttermilk, shake off excess, and coat in the seasoned flour.
- Place breaded catfish on a wire rack until oil is hot.
- Fry catfish for 5-6 minutes on each side until golden brown.
- Drain fried catfish on paper towels or a wire rack.
