Ingredients

The catfish

  • 4 fillets catfish
  • cups buttermilk

The breading

  • cups cornmeal
  • 1 tablespoon granulated garlic
  • 1 teaspoon onion powder
  • ½-1 teaspoon cayenne pepper
  • 1 teaspoon white or black pepper
  • 2 teaspoons salt

The spicy tartar sauce

  • 1 cup mayonnaise
  • 1 tablespoon finely diced onion
  • ½-1 teaspoon prepared mustard
  • 3 tablespoons hot pepper relish
  • 1 tablespoon granulated garlic
  • 1 dash hot sauce
  • to taste salt and pepper

The frying oil

  • as needed vegetable oil

Instructions

  1. Heat the oil in a deep-fryer or large pot to 375°F (190°C).
  2. In a bowl, mix the cornmeal, garlic powder, onion powder, cayenne, salt, and pepper.
  3. Pour buttermilk into another bowl.
  4. If needed, cut the catfish fillets into manageable pieces.
  5. Dip each catfish fillet in buttermilk, letting excess drain, then coat in the cornmeal mixture.
  6. Deep fry the fish in batches until golden brown and crispy, about 3-4 minutes per side.
  7. Remove the fish and drain on a rack to keep crispy.
  8. Serve with a squeeze of lemon and spicy tartar sauce.
  9. For the tartar sauce, mix all ingredients and chill for at least an hour before serving.
