Gluten Free Green Tea Crepes

Ingredients

  • 2 medium eggs
  • 2 Tbsp butter (melted)
  • 1 ½ Tbsp sugar
  • 1 ¼ cup gluten-free flour blend
  • 1 ½ tsp matcha (green tea) powder
  • 1 heaping cup milk (any kind)
  • ½ tsp pure vanilla extract

Instructions

  1. Blend all ingredients until smooth.
  2. Heat a non-stick skillet over low heat and spray with non-stick spray.
  3. Pour about ¼ cup of batter into the skillet, swirling to coat the bottom.
  4. Cook for 1-2 minutes until the top is dry and edges brown.
  5. Flip the crepe and cook for another minute.
  6. Transfer to a plate, placing wax paper between crepes to keep fresh.
  7. Serve warm with filling and toppings as desired.
