Gluten Free Crepes

Ingredients

Crepes

  • 8 eggs eggs (whites separated)
  • 4 whole whole eggs
  • ¼ cup water
  • 1 tbsp ghee or coconut oil
  • 20 drops vanilla liquid stevia
  • tsp sea salt
  • 3 tbsp arrowroot flour
  • 3 tbsp coconut flour

For cooking

  • as needed tbsp coconut oil (for greasing)

Instructions

  1. Separate the egg whites from the yolks.
  2. Blend the egg whites, whole eggs, water, ghee (or coconut oil), stevia, sea salt, arrowroot flour, and coconut flour until pureed.
  3. Preheat a frying pan over medium heat.
  4. Grease the pan with coconut oil before pouring in the batter.
  5. Pour batter into the pan, leaving about an inch of space around the edges.
  6. Swirl the pan to spread the batter evenly.
  7. Cook for about 30 seconds, then flip the crepe and cook for a few more seconds.
  8. Roll or fold the crepe and keep it covered while making more.
