Chicken and Sundried Tomato Pasta

Instructions
- Cook the pasta according to the package instructions, reserving at least ½ cup of the cooking liquid.
- While the pasta cooks, cut the chicken into bite-sized cubes and cook in a skillet over medium-high heat until golden brown.
- Chop the sundried tomatoes and kalamata olives, then add them to the skillet with the chicken and stir for about 1 minute until fragrant.
- Add the drained pasta, parmesan cheese, olive oil, salt, pepper, fresh parsley, and ¼ cup of the reserved cooking liquid to the skillet. Toss gently to combine, adding more cooking liquid if needed.
- Serve immediately, garnished with additional parsley and parmesan if desired.
