Ingredients

The pasta

  • 275 g Whole Grain Spaghetti
  • ½ cup pasta cooking liquid

The protein

  • 2 small chicken breasts

The vegetables

  • 85 g sundried tomatoes
  • 20-25 pieces kalamata olives
  • 2-3 tbsp fresh parsley

The flavorings

  • 1 tbsp extra virgin olive oil
  • 2-3 tbsp fresh parmesan cheese
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Cook the pasta according to the package instructions, reserving at least ½ cup of the cooking liquid.
  2. While the pasta cooks, cut the chicken into bite-sized cubes and cook in a skillet over medium-high heat until golden brown.
  3. Chop the sundried tomatoes and kalamata olives, then add them to the skillet with the chicken and stir for about 1 minute until fragrant.
  4. Add the drained pasta, parmesan cheese, olive oil, salt, pepper, fresh parsley, and ¼ cup of the reserved cooking liquid to the skillet. Toss gently to combine, adding more cooking liquid if needed.
  5. Serve immediately, garnished with additional parsley and parmesan if desired.
