Ingredients

  • 4 and 1/4 cups all-purpose flour
  • 1 and 1/2 teaspoons salt
  • 1 and 1/2 teaspoons baking soda
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons honey or granulated sugar
  • 1 and 3/4 cups buttermilk
  • 1 tablespoon buttermilk (for brushing)
  • 1 tablespoon whole oats (optional)
  • to taste none coarse sea salt or flaky sea salt (optional)

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare your baking pan.
  2. Whisk together the flour, salt, and baking soda in a large bowl.
  3. Mix the melted butter and honey or sugar, then pour into the flour mixture and combine.
  4. Gradually add the buttermilk in 2-3 additions, mixing until a shaggy dough forms.
  5. Transfer the dough to a floured surface, shape it into a disc about 7-8 inches wide and 2 inches thick.
  6. Place the disc on the prepared baking pan, brush with buttermilk, and score an X on top.
  7. Bake for about 45 minutes until golden brown and the center is cooked through.
  8. Let the bread cool for 5 minutes before slicing, but for best flavor, cool for at least 30 minutes.
