Ingredients

The bread

  • 2 cups rolled oats
  • 10 ounces unbleached all-purpose flour
  • teaspoons baking soda
  • teaspoons fine-grain sea salt
  • cups buttermilk
  • 2 tablespoons buttermilk (for brushing)
  • to taste mixed seeds (optional)

For greasing

  • to taste butter

Instructions

  1. Preheat the oven to 400°F (205°C) and prepare a loaf pan with butter and parchment paper.
  2. If making oat flour, pulse rolled oats in a food processor until fine.
  3. Sift the flour, baking soda, and salt into a bowl, then create a well in the center.
  4. Pour in the buttermilk and mix until a dough forms, adding more buttermilk if too dry.
  5. Knead the dough briefly on a floured surface until cohesive.
  6. Transfer the dough to the prepared pan and brush the top with buttermilk.
  7. Sprinkle seeds on top and make slashes in the dough.
  8. Bake for about 30 minutes, then move the bread up a rack for an additional 20 minutes until crusty.
  9. Cool on a wire rack before slicing.
