Instructions
- Preheat the oven to 400°F (205°C) and prepare a loaf pan with butter and parchment paper.
- If making oat flour, pulse rolled oats in a food processor until fine.
- Sift the flour, baking soda, and salt into a bowl, then create a well in the center.
- Pour in the buttermilk and mix until a dough forms, adding more buttermilk if too dry.
- Knead the dough briefly on a floured surface until cohesive.
- Transfer the dough to the prepared pan and brush the top with buttermilk.
- Sprinkle seeds on top and make slashes in the dough.
- Bake for about 30 minutes, then move the bread up a rack for an additional 20 minutes until crusty.
- Cool on a wire rack before slicing.
